Ingredients
- 1 cup corn (frozen, thawed and drained)
- 1 strip bacon (cooked and diced)
- â…• white onion (coarsely chopped )
- ½ tsp ground cumin
- ½ quart water
- ⅕ jalapeño pepper (large, deseeded and diced)
- â…• tsp salt
- 1 tsp lime juice
Instructions
- In a pot, sauté onion and bacon until onion is translucent. Add cumin and cook for another couple minutes.
- Put corn in with onion, add water and jalapeño. Simmer for 20 minutes. Puree on high speed for 3 to 4 minutes. Add salt and lime juice. Enjoy!
