Banana Chai Crepes with Strawberry Sauce

These tender crepes are infused with an aromatic chai flavor, filled with sliced bananas, and drizzled with a luscious homemade strawberry sauce. They can be served for breakfast or dessert!

Ingredients 

Crepes

  • 1 egg
  • ¼ cup almond milk (cashew milk is an option)
  • 1 ½ tsp honey
  • 1 tbsp ground flax seed
  • ¼ cup almond flour
  • ¼ tsp vanilla
  • ½ tsp cinnamon
  • tsp ground nutmeg

Filling

  • 1 bananas (sliced)

Sauce

  • ½ Cup strawberries (sliced)
  • 1 ½ tsp pure maple syrup
  • 1 ½ tsp coconut oil (plus additional to coat pan)

Instructions 

  • Place all ingredients for crepes in bowl and mix well. Stir until smooth.
  • Heat a medium-sized frying pan and add a small amount of coconut oil. Coat pan with oil.
  • Add batter and spread into a smooth, thin layer.
  • Cook over medium heat for about 5 minutes, flip, and cook for an additional 3-4 minutes.
  • Place crepe on a plate, add 1/2 of a sliced banana to the center, and roll. Continue doing this for additional crepes.
  • To prepare the sauce, add strawberries, maple syrup, and coconut oil to a small pan and cook over low/med. heat. When strawberries have softened and oil has melted, use a fork to break up strawberries.
  • Pour sauce over crepes and serve.
