Ingredients
Crepes
- 1 egg
- ¼ cup almond milk (cashew milk is an option)
- 1 ½ tsp honey
- 1 tbsp ground flax seed
- ¼ cup almond flour
- ¼ tsp vanilla
- ½ tsp cinnamon
- â…› tsp ground nutmeg
Filling
- 1 bananas (sliced)
Sauce
- ½ Cup strawberries (sliced)
- 1 ½ tsp pure maple syrup
- 1 ½ tsp coconut oil (plus additional to coat pan)
Instructions
- Place all ingredients for crepes in bowl and mix well. Stir until smooth.
- Heat a medium-sized frying pan and add a small amount of coconut oil. Coat pan with oil.
- Add batter and spread into a smooth, thin layer.
- Cook over medium heat for about 5 minutes, flip, and cook for an additional 3-4 minutes.
- Place crepe on a plate, add 1/2 of a sliced banana to the center, and roll. Continue doing this for additional crepes.
- To prepare the sauce, add strawberries, maple syrup, and coconut oil to a small pan and cook over low/med. heat. When strawberries have softened and oil has melted, use a fork to break up strawberries.
- Pour sauce over crepes and serve.
