Ingredients 

  • 1 tsp butter
  • 2 eggs (beaten)
  • ¼ cup low-fat cottage cheese
  • ¼ cup black beans
  • ¼ cup peppers (diced )
  • 1 whole wheat tortilla
  • 1 tbsp low-fat plain Greek yogurt
  • 1 tbsp salsa

Instructions 

  • Put butter into pan and melt over med-high heat.
  • Add eggs, cottage cheese, peppers, and beans.
  • When eggs are almost set place tortilla over eggs to warm tortilla.
  • Remove tortilla and place egg mixture in center.
  • Add yogurt and salsa and roll tortilla. Enjoy or wrap in foil to take with you.
