Heavenly Dark Chocolate & Pumpkin Cookies (Gluten free and dairy free!)

The combination of pumpkin, dark chocolate, and currants is spectacular!

Ingredients 

  • 1 cup pumpkin (canned, not pumpkin pie filling )
  • 1 egg
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • 1 cup flour (make sure to use gluten-free flour if gluten intolerant)
  • ¼ cup dark chocolate chips
  • ¼ cup nuts (optional)
  • 2 tbsp dried currants (optional)

Instructions 

  • This recipe makes 12 cookies. The nutritional information is based on 2 cookies. You can freeze cookies!
  • Preheat the oven to 350ºF.
  • In a bowl, beat together the pumpkin, egg, and vanilla extract.
  • Add in the cinnamon, nutmeg, and oat flour and stir the ingredients well.
  • Stir in the chocolate chips and optional nuts or currants
  • Scoop out the dough into small balls and place on a cookie sheet.
  • Bake for about 15 minutes.
  • Enjoy! They're good fresh out of the oven 🙂
