Ingredients 

  • ¾ cup couscous (prepared according to package)
  • ½ cup spinach (packed - can substitute arugula )
  • ¼ cup tomatoes (diced)
  • 2 tbsp feta cheese
  • 1 tbsp onion (diced)
  • lemon (juiced)
  • 4 tsp olive oil
  • salt and pepper (to taste)
  • balsamic (optional to drizzle on top)

Instructions 

  • Put cooked couscous into a larger bowl, and mix in the spinach, tomatoes, feta cheese, onion, lemon juice, olive oil, and salt and pepper. Mix well. Serve immediately or let chill for 1 hour before serving.
