Egg Drop Soup



2 cups chicken or vegetable broth

1 tsp minced ginger

1 tsp olive oil

1 tsp sesame oil

Splash of soy sauce or liquid aminos if gluten free

1 green onion or scallion - thinly sliced (don’t pre slice for show)

2 eggs



Add oils to pan and cook over medium heat. Add ginger and white part of green onion. 1/2 of the sliced green onions. Cook for 1 minute. Add broth and soy sauce and bring to low boil. Beat eggs in separate bowl. Slowly pour eggs in a circular motion. Cook for 1 minute, turn off heat and let sit for 30 seconds and then gently stir. Pour into bowls and top with some of the green part of onion.
