Ingredients 

  • 2 cups roasted vegetables
  • 2 cups vegetable or chicken broth
  • ¼ cup milk (any kind)
  • 1 ½ tsp fresh basil (chopped; can substitute parsley or cilantro)
  • salt & pepper (to taste)

Instructions 

  • Combine all ingredients into a blender. Check the thickness of the soup. If you would like it thinner add additional broth.

Makes 2 servings.
