Ingredients 

  • 3 tbsp almond milk (unsweetened)
  • cup tomatillos (fresh, diced)
  • cup chicken broth (organic preferred)
  • ½ avocados (ripe, pealed, and pitted)
  • ¼ serrano pepper (seeded)
  • ¼ garlic clove
  • 1 ½ tsp red bell pepper (minced)
  • ¾ tsp fresh chives (chopped)
  • ½ tsp lemon juice (fresh squeezed)
  • 2 ounces crabmeat (can substitute shrimp, or other cooked and chopped fish)

Instructions 

  • Place first 7 ingredients in a blender; process until smooth.
  • Combine bell pepper and remaining ingredients; toss gently to combine.
  • Spoon soup in a bowl and top with fish of choice.
