  1. Preheat oven to 375º
  2. Slice zucchini lengthwise. Scoop out the inside seeds of the zucchini using a small spoon or a small knife cutting down at an angle toward the center. Take the part you scooped out and finely chop.
  3. Put oil in a pan over medium heat. Add chopped onion and cook until golden brown (about 4 mins). Add the zucchini (that you just scooped out) and the ground beef. Chop meat into small pieces while browning.
  4. When the meat is fully cooked, add the cinnamon, oregano, tomato sauce, and olives. Cook over low heat for 5 minutes, remove from heat, and fill the scooped-out zucchini. Sprinkle with the goat cheese.
  5. Place the "boats" on a baking sheet and bake for 25 minutes or until the zucchini is tender and the cheese is slightly browned.

    I thought this was really tasty and easy to make. The boats are cute but I think the next time, I will peel the zucchini and just dice it and skip the boats. However, the boats help with portion control!
