Greek Zucchini Boats

- Preheat oven to 375º
- Slice zucchini lengthwise. Scoop out the inside seeds of the zucchini using a small spoon or a small knife cutting down at an angle toward the center. Take the part you scooped out and finely chop.
- Put oil in a pan over medium heat. Add chopped onion and cook until golden brown (about 4 mins). Add the zucchini (that you just scooped out) and the ground beef. Chop meat into small pieces while browning.
- When the meat is fully cooked, add the cinnamon, oregano, tomato sauce, and olives. Cook over low heat for 5 minutes, remove from heat, and fill the scooped-out zucchini. Sprinkle with the goat cheese.
- Place the "boats" on a baking sheet and bake for 25 minutes or until the zucchini is tender and the cheese is slightly browned.

I thought this was really tasty and easy to make. The boats are cute but I think the next time, I will peel the zucchini and just dice it and skip the boats. However, the boats help with portion control!
