Ingredients
- 2 tbsp broth (vegetable or chicken)
- 1 cup spinach (packed)
- ½ cup mushrooms (sliced)
- ½ cup tomatoes (diced)
- 1 egg
Instructions
- Pour broth in a small frying pan and add spinach, mushrooms and tomatoes. Cook over medium heat stirring often.
- Crack egg and gently pour on top of vegetables. Cover pan with a lid. Cook for approximately 4 min. or until egg is cooked.
- Garnish with whatever herbs or spices you like best, or serve with an optional side of avocado for even more flavor!

The this was a great recipe to add veggies for the day. My vegetables got a little mushy with the added broth. I did enjoy the poached eggs.
Glad you liked it! You could definitely cut back on the broth or use a tsp of olive oil instead so the veggies would be more firm.
