Healthy Breakfast: Veggies with a Poached Egg

Ingredients 

  • 2 tbsp broth (vegetable or chicken)
  • 1 cup spinach (packed)
  • ½ cup mushrooms (sliced)
  • ½ cup tomatoes (diced)
  • 1 egg

Instructions 

  • Pour broth in a small frying pan and add spinach, mushrooms and tomatoes. Cook over medium heat stirring often.
  • Crack egg and gently pour on top of vegetables. Cover pan with a lid. Cook for approximately 4 min. or until egg is cooked.
  • Garnish with whatever herbs or spices you like best, or serve with an optional side of avocado for even more flavor!
