Ingredients
- 1 cup pumpkin (canned, not pumpkin pie filling )
- 1 egg
- 1 tsp vanilla extract
- ½ tsp cinnamon
- ½ tsp nutmeg
- 1 cup flour (make sure to use gluten-free flour if gluten intolerant)
- ¼ cup dark chocolate chips
- ¼ cup nuts (optional)
- 2 tbsp dried currants (optional)
Instructions
- This recipe makes 12 cookies. The nutritional information is based on 2 cookies. You can freeze cookies!
- Preheat the oven to 350ºF.
- In a bowl, beat together the pumpkin, egg, and vanilla extract.
- Add in the cinnamon, nutmeg, and oat flour and stir the ingredients well.
- Stir in the chocolate chips and optional nuts or currants
- Scoop out the dough into small balls and place on a cookie sheet.
- Bake for about 15 minutes.
- Enjoy! They're good fresh out of the oven 🙂

I am not used to eating low sugar treats, so this is not too bad!

The recipe calls for nutmeg but it doesn’t have it in the list of ingredients. Why not?
