Heavenly Dark Chocolate & Pumpkin Cookies (Gluten free and dairy free!)

Instructions
- This recipe makes 12 cookies. The nutritional information is based on 2 cookies. You can freeze cookies!
- Preheat the oven to 350ºF.
- In a bowl, beat together the pumpkin, egg, and vanilla extract.
- Add in the cinnamon, nutmeg, and oat flour and stir the ingredients well.
- Stir in the chocolate chips and optional nuts or currants
- Scoop out the dough into small balls and place on a cookie sheet.
- Bake for about 15 minutes.
- Enjoy! They're good fresh out of the oven :)
