Make Ahead Muffins

Instructions
- Preheat oven to 350°.
- Combine eggs, garlic powder, salt and pepper in bowl. Whisk to combine.
- Spray cooking spray in wells of a muffin tin. Divide the red pepper, onion, and the cheese evenly in the wells.
- Pour the egg mixture over the cheese and vegetables.
- Bake for 20 minutes or until set.
- Remove from cups and serve warm or let cool and refrigerate for up to 5 days.

Yes, you can definitely freeze make-ahead egg muffins! They hold up well in the freezer for up to 3 months when stored in a freezer-safe bag or container. Simply thaw in the fridge overnight before reheating in the microwave or oven.
