Ingredients 

  • 2 eggs
  • 1 pinch garlic powder
  • ¼ cup bell pepper (chopped)
  • salt and pepper (to taste)
  • 1 tbsp yellow onion (chopped)
  • cup cheese (shredded, any kind (optional))

Instructions 

  • Preheat oven to 350°.
  • Combine eggs, garlic powder, salt and pepper in bowl. Whisk to combine.
  • Spray cooking spray in wells of a muffin tin. Divide the red pepper, onion, and the cheese evenly in the wells.
  • Pour the egg mixture over the cheese and vegetables.
  • Bake for 20 minutes or until set.
  • Remove from cups and serve warm or let cool and refrigerate for up to 5 days.

    1. Yes, you can definitely freeze make-ahead egg muffins! They hold up well in the freezer for up to 3 months when stored in a freezer-safe bag or container. Simply thaw in the fridge overnight before reheating in the microwave or oven.
