Ingredients
- 1 chicken breast
- ¼ avocado
- 1 ½ tbsp salsa
- ¾ tbsp plain yogurt
- ⅓ cup arugula
- ⅛ lime (juiced)
- ½ tbsp olive oil
- 2 tortilla chips (optional)
Instructions
- Put chicken in crock pot, cover with water and slow cook on high and cook for 4 hours.
- Take chicken out of crock pot and shredded with fork and knife. Put chicken on plate.
- Dice avocado and put on top of chicken.
- Spoon salsa over chicken and avocado. Top with yogurt.
- Crush tortilla chips and sprinkle over food.
- Put the arugula in a separate bowl. Add lime and oil and toss well. Put arugula around chicken mixture!
