Ingredients 

  • 1 chicken breast
  • ¼ avocado
  • 1 ½ tbsp salsa
  • ¾ tbsp plain yogurt
  • cup arugula
  • lime (juiced)
  • ½ tbsp olive oil
  • 2 tortilla chips (optional)

Instructions 

  • Put chicken in crock pot, cover with water and slow cook on high and cook for 4 hours.
  • Take chicken out of crock pot and shredded with fork and knife. Put chicken on plate.
  • Dice avocado and put on top of chicken.
  • Spoon salsa over chicken and avocado. Top with yogurt.
  • Crush tortilla chips and sprinkle over food.
  • Put the arugula in a separate bowl. Add lime and oil and toss well. Put arugula around chicken mixture!
