Seared Salmon and Sweet Potato Hash

Ingredients 

  • ¼ lb salmon
  • 1 ½ tsps oil (divided use)
  • ¼ tsp cajun seasoning
  • 1 ½ tsp lemon juice (fresh)
  • ½ sweet potato (cooked)
  • â…™ cup celery (diced)
  • â…™ cup onions (diced)
  • ½ egg (optional)

Instructions 

  • Sprinkle salmon with 1 tsp dill. Put 1 tbsp oil in cast iron pan. Put over high heat. Once pan is very hot, add salmon fillets. Cook for 2 min and once the salmon releases from the pan flip and cook until it reaches your desired doneness.
  • Peel and cut sweet potatoes into bite-size pieces. Put 1 tbsp oil into pan once hot add onions. Cook for 3 minutes and add celery and sweet potatoes. Cook for 4 minutes and stir after 2 minutes.
  • Break salmon into bite-size pieces, add to pan and stir.
  • Add 4 eggs and place gently on top of salmon hash. Turn heat to low, cover and cook until eggs are just set.
