Ingredients
- 1 cup power greens (kale, spinach & chard)
- 1 tbsp plain Greek yogurt (can use ricotta cheese)
- 1 tbsp mozzarella cheese (shredded)
- 1 egg
- salt and pepper (to taste)
- 1 tsp oil or cooking spray
Instructions
- Preheat oven to 400°.
- Put greens, cheese, yogurt /ricotta, eggs, salt, and pepper into blender. Blend a few minutes until smooth.
- Coat pan with oil and pour spinach mixture into pan. Cook for about 15 min. Do not overcook. Take it out just before it’s completely firm as it will continue to cook when you take it out.
Notes
My favorite is to cut into pieces and put in toaster to warm!

What size/type pan do you use? Is yogurt a side dish?
I used parmesan cheese instead of mozzarella and water instead of Greek yogurt. It’s what I had, what God provided for me to use.
Did it still work with those substitutions. Good job being creative!
What is powder greens and where do you get the powder
Power greens consist of kale, spinach and sometimes other dark leafy greens. You can also just use spinach leaves or just kale. It is not a powder it is a vegetable. Sorry about the confusion.

I do have a couple of questions… When I click the metric system it doesn’t seem to translate in the grocery list.
When in double the recipe the size pan and time to cook doesn’t change…
I’m just curious…I can make my own adjustments.

Thank you for bringing this up. I am going to change some of the recipes to make it easier to know how much to use. I see how when you change the serving sizes some of them aren’t easy to understand. We will begin adjusting them. Thank you
The pan size would depend on how many servings you are making. If it is just 1 serving a small 4 x 4 glass pan is best. I just adjusted the recipe to include the yogurt – sorry about that I forgot to include that.
So how many servings in a square 8×8 pan 2 inch deep?

Mine does not look like the photo at all but it was very very good. I blended it til smooth and it was all one liquid, not separate like the photo. Very bright green liquid. I multiplied it by 5 and poured it into a casserole dish. I think next time I will need a smaller dish as it turned out pretty flat but it was cooked just right. I don’t think it would be solid enough for me to put in the toaster. Did I do this right?
When I doubled the recipe, I baked it in an 8×8 pan and they came out really thin…haha They taste good but should I bake in a smaller pan? I also added fresh basil and mushrooms, yum!
Thanks for the feedback and for the great suggestion on the variation! Mine are typically 1.5″ – 2″ thick but the thickness is a personal preference so use a pan to accommodate your preference. Make sure to adjsut the cooking time – the thicker they are the longer the baking time as I’m sure you know.
So is one serving size like a 1×1″ or 2×2″ square?
It is hard to say the exact size because your pan size will vary. The best answer is take the number of servings you are making and divide your bars into that number and that will be your serving size.
