A great side for any meal!

Ingredients 

  • ¼ tomato (diced, I love the Heirlooms)
  • 1/32 cup red onion (diced small)
  • ¾ oz mozzarella (fresh, diced)
  • 1/16 cup basil (fresh)
  • ½ tbsp balsamic vinegar
  • ½ tbsp olive oil
  • salt and pepper to taste

Instructions 

  • Cut tomatoes into thick slices (approximately 4 slices/tomato).
  • Place on platter.
  • Cover tomatoes with onions, mozzarella, basil. Drizzle with vinegar and oil. Add salt and pepper to taste.
