Ingredients
- ¼ cup old fashion oats
- ¼ cup almonds (or other nut)
- ¼ cup low-fat plain yogurt (use diary-free if needed)
- ¼ cup milk (skim, 1%, 2% almond… any kind will work)
- ¼ tsp vanilla
- 1 eggs (beaten)
- ½ tbsp honey (or pure maple syrup)
- ¼ tsp baking soda
- ¼ tsp baking powder
- ¼ tbsp coconut oil
Instructions
- Combine oats and nuts in a blender and pulse until almost smooth.
- Put oat mixture into a large bowl and stir in yogurt, milk and vanilla and let stand overnight in the fridge.
- The next day, add in remaining ingredients.
- If batter is too thick add a bit more milk. Mix all ingredients together.
- Add a small amount of coconut oil to large pan. Once it is melted add batter and make pancakes.
- Great with apple sauce or warmed berries.
