Ingredients 

  • 1 whole wheat tortilla (use corn for gluten-free)
  • 3 oz chicken breast (sliced, can use thigh)
  • â…› cup quinoa (uncooked)
  • ¼ cup salsa
  • 1 tbsp low-fat plain yogurt (or substitute dairy-free yogurt)
  • ½ tomato (diced)
  • ¼ cup lettuce (chopped, can use spinach or kale)

Instructions 

  • Mix pork (or chicken), quinoa, salsa, yogurt, lettuce and tomato.
  • Place the tortilla on a plate and put all the ingredients in the middle. Wrap and enjoy!
