Ingredients:

  • 1 banana
  • 1 egg
  • 1 tsp peanut or almond butter make sure only ingredients are peanuts and salt
  • 1/4 cup pecans (or not of your choice)
  • 1 tsp butter or coconut oil
  • 1/2 cup sliced strawberries or blueberries

Directions:

Place banana, egg, peanut butter & pecans in blender. Blend until smooth. Put butter in a large pan. Heat the pan until butter is melted. Pour in batter to form 3 small pancakes. Turn to med/low heat and cover. Cook for 2-3 min and flip pancakes. Cook uncovered for 2 minutes. Heat berries until soft and juices are released. Pour over pancakes.

Great for breakfast, snack or dessert.
