Ingredients:
- 2 to 3 cups baby spinach
- 1 peach (sliced)
- 1/4 cup blueberries
- 2 hard-boiled eggs
- 2 tbsps feta cheese
- 2 tbsps chopped pecans or walnuts
- sprinkle sea salt (to taste)
- 2 tsp balsamic vinegar
- 2 tsp extra virgin olive oil
Directions:
Place 1/2 the spinach on 2 plates. Add peach and blueberries. Slice the hard boiled eggs and put over fruit. Sprinkle salads with feta and nuts. Drizzle vinegar and oil and add a touch of salt!
