INGREDIENTS:
  • 1/2 cup mango diced into small pieces
  • 1/2 cup red pepper diced into small pieces
  • 1/2 cup cucumber diced into small pieces
  • 1/2 cup red onion diced into small pieces
  • 1/2 cup cilantro diced into small pieces
  • 1/4 red wine vinegar

INSTRUCTIONS:

Mix all your ingredients together and serve alongside some fish tacos, chips or like I did alongside some tuna cakes!
