Ingredients
- 1 cup berries (I used blueberries but can use blackberries, raspberries, strawberries)
- 1 tbsp fresh lemon juice
- ¾ tsp lemon zest
- 1 tbsp chia seeds
Instructions
- Put berries in a pot and cook over medium heat for about 5-7 minutes until berries have softened and juice is released.
- Add lemon juice and zest and put in blender. Blend until almost smooth but leave a little bit of chunks.
- Pour the berry mixture back into the pot and stir in chia seeds. Cook over low heat and stir continuously for 10 minutes or until a gelled consistency.
- Pour the jelly into jars. When it reaches room temperature, put the lid on the jar and put it in the refrigerator to store.
