A wholesome, lightly sweet breakfast made with oats, berries, and maple syrup. Simple to prep, nourishing, and perfect for busy mornings.

Ingredients 

  • 1 cup milk (dairy or nondairy)
  • 1 egg
  • 1 tbsp pure maple syrup
  • 1 cup blueberries
  • 2 tbsp butter (melted and slightly cooled)
  • 2 tbsp unsweetened applesauce (or mashed banana)
  • 1 ½ cups old-fashioned whole rolled oats
  • ½ tsp baking powder
  • ½ tsp ground cinnamon
  • ½ tsp pure vanilla extract (can use almond extract)
  • â…› tsp salt (a small pinch)

Instructions 

  • Preheat oven to 350°F. Grease a 1 1/2-quart baking dish.
  • In a large bowl, whisk all ingredients together. Pour into the prepared pan and top with nuts, if using.
  • Bake for 35 minutes, until the center is almost set.
  • Cool 5 minutes before serving. Enjoy warm, with yogurt if desired.

Makes about 4 servings.
