Ingredients
- 1 cup milk (dairy or nondairy)
- 1 egg
- 1 tbsp pure maple syrup
- 1 cup blueberries
- 2 tbsp butter (melted and slightly cooled)
- 2 tbsp unsweetened applesauce (or mashed banana)
- 1 ½ cups old-fashioned whole rolled oats
- ½ tsp baking powder
- ½ tsp ground cinnamon
- ½ tsp pure vanilla extract (can use almond extract)
- â…› tsp salt (a small pinch)
Instructions
- Preheat oven to 350°F. Grease a 1 1/2-quart baking dish.
- In a large bowl, whisk all ingredients together. Pour into the prepared pan and top with nuts, if using.
- Bake for 35 minutes, until the center is almost set.
- Cool 5 minutes before serving. Enjoy warm, with yogurt if desired.
