Ingredients
- 4 oz cod
- ½ tbsp olive oil
- 1 clove garlic (minced)
- ½ tsp fresh ginger (grated)
- 2 cups spinach
- ¼ cup brown rice (cook according to package)
Instructions
- Preheat oven to 375°F. Rub cod with garlic, ginger, and olive oil - reserve 1/4 of the olive oil for the next step. Bake for 12-15 minutes.
- Add remaining olive oil to a pan over medium heat and sauté spinach for 2 minutes or until desire doneness.
- Serve with brown rice.
