Ingredients 

  • 4 oz cod
  • ½ tbsp olive oil
  • 1 clove garlic (minced)
  • ½ tsp fresh ginger (grated)
  • 2 cups spinach
  • ¼ cup brown rice (cook according to package)

Instructions 

  • Preheat oven to 375°F. Rub cod with garlic, ginger, and olive oil - reserve 1/4 of the olive oil for the next step. Bake for 12-15 minutes.
  • Add remaining olive oil to a pan over medium heat and sauté spinach for 2 minutes or until desire doneness.
  • Serve with brown rice.
