Ingredients 

  • ¼ cup chicken broth
  • ¼ cup tomatoes (canned, drained)
  • ¼ onion (diced)
  • ½ red pepper (diced)
  • ¼ lb chicken (boneless, skinless breast)
  • ½ tsp Hungarian paprika
  • ¾ tsp olive oil
  • tsp caraway seed (optional)
  • 2 ¼ tsp sour cream (more or less to taste)
  • 4 tsp plain yogurt
  • 1 tbsp fresh parsley (minced)

Instructions 

  • Add olive oil to a large pan and heat over med/high heat. Add chicken, stir and cook for 7-10 min. Add paprika and stir well.
  • Add onions, peppers, and broth, and cook uncovered for 10 minutes. Add tomatoes, sour cream, yogurt, and caraway seeds.
  • Stir well and cook until heated. Add salt and pepper to taste.
  • Place in bowls and sprinkle 1 tbsp fresh parsley over each serving.
