Ingredients
Salad
- 1 cup zucchini (sliced into 1/4-inch coins)
- 1 tsp jalapeño (seeds removed, finely chopped)
- 1 pinch salt
- ¼ cup corn (frozen & thawed, grilled, or fresh)
- 6 cherry tomatoes (halved)
- 1 ½ tbsp feta cheese (crumbled)
Dressing
- 1 tsp extra-virgin olive oil
- 2 tsp fresh lime juice
- â…› tsp chili powder (a small pinch)
- 1 pinch salt
- â…› tsp cumin
- 1 tsp cilantro (chopped)
Instructions
- In a skillet, lightly sauté zucchini and jalapeño with a touch of oil until just tender.
- Stir in corn and heat through. Remove from heat.
- Toss with cherry tomatoes and feta.
- Whisk vinaigrette ingredients together and drizzle over salad.
