Ingredients 

Salad

  • 1 cup zucchini (sliced into 1/4-inch coins)
  • 1 tsp jalapeño (seeds removed, finely chopped)
  • 1 pinch salt
  • ¼ cup corn (frozen & thawed, grilled, or fresh)
  • 6 cherry tomatoes (halved)
  • 1 ½ tbsp feta cheese (crumbled)

Dressing

  • 1 tsp extra-virgin olive oil
  • 2 tsp fresh lime juice
  • â…› tsp chili powder (a small pinch)
  • 1 pinch salt
  • â…› tsp cumin
  • 1 tsp cilantro (chopped)

Instructions 

  • In a skillet, lightly sauté zucchini and jalapeño with a touch of oil until just tender.
  • Stir in corn and heat through. Remove from heat.
  • Toss with cherry tomatoes and feta.
  • Whisk vinaigrette ingredients together and drizzle over salad.
