Healthy Blueberry (or other fruit) Jelly

You won't believe how amazing this jelly tastes and it has zero added sugar!

Ingredients 

  • 1 cup berries (I used blueberries but can use blackberries, raspberries, strawberries)
  • 1/12 cup fresh lemon juice
  • ¾ tsp lemon zest
  • 1/12 cup chia seeds

Instructions 

  • Put berries in a pot and cook over medium heat for about 5-7 minutes until berries have softened and juice is released.
  • Add lemon juice and zest and put in blender. Blend until almost smooth but leave a little bit of chunks.
  • Pour the berry mixture back into the pot and stir in chia seeds. Cook over low heat and stir continuously for 10 minutes or until a gelled consistency.
  • Pour the jelly into jars. When it reaches room temperature, put the lid on the jar and put it in the refrigerator to store.
