Overnight Oatmeal Pancakes

Ingredients 

  • ½ cup old fashion oats
  • ½ cup almonds (or other nut)
  • ½ cup low-fat plain yogurt (use diary-free if needed)
  • ½ cup milk (skim, 1%, 2% almond… any kind will work)
  • ½ tsp vanilla
  • 1 eggs (beaten)
  • 2 tsp pure maple syrup
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 2 tsp coconut oil

Instructions 

  • Combine oats and nuts in a blender and pulse until almost smooth.
  • Put oat mixture into a large bowl and stir in yogurt, milk and vanilla and let stand overnight in the fridge.
  • The next day, add in remaining ingredients.
  • If batter is too thick add a bit more milk. Mix all ingredients together.
  • Add a small amount of coconut oil to large pan. Once it is melted add batter and make pancakes.
  • Great with apple sauce or warmed berries.

Makes 4 servings.

    I didn’t have much luck with these. they turned out way too thin and were sticking to the bottom of my griddle. Maybe you’re supposed to cook these in a pan and not a griddle? I’m not sure. They were also a little bit runny in the middle, even though I left them on there for quite a long time at 375° which I believe is the recommended temperature. I like the concept of these. I will probably try to do it one more time and maybe add less milk next time and use a pan to see if that makes a difference.

    1. I am sorry you didn’t have luck with the pancakes. It is important to use old fashioned oats and to make sure they are refrigerated overnight to create the right consistency. I am glad to hear you are going to give them another shot!
