Ingredients
- 1 whole wheat tortilla (use corn for gluten-free)
- 3 oz chicken breast (sliced, can use thigh)
- â…› cup quinoa (uncooked)
- ¼ cup salsa
- 1 tbsp low-fat plain yogurt (or substitute dairy-free yogurt)
- ½ tomato (diced)
- ¼ cup lettuce (chopped, can use spinach or kale)
Instructions
- Cook quinoa according to package
- Mix pork (or chicken), quinoa, salsa, yogurt, lettuce and tomato.
- Place the tortilla on a plate and put all the ingredients in the middle. Wrap and enjoy!

Uncooked quinoa?
Thank you for bringing this to my attention. We have corrected the recipe. You will need to cook the quinoa according to the package. When you cook quinoa it triples in size so 1/4 cup uncooked yields 3/4 cup cooked
