Ingredients
- 1 whole wheat tortillas (use corn for gluten-free)
- 3 oz chicken (sliced - can use port)
- â…› cup quinoa (uncooked)
- ¼ cup salsa
- 1 tbsp low-fat plain yogurt (or substitute dairy-free yogurt)
- ½ tomato (diced)
- ¼ cup lettuce (chopped, can use spinach or kale)
Instructions
- Mix pork (or chicken), quinoa, salsa, yogurt, lettuce and tomato.
- Place the tortilla on a plate and put all the ingredients in the middle. Wrap and enjoy!
