Ingredients
Salad
- ¼ cup quinoa (cooked according to package directions; can substitute farro)
- 1 cup spinach (fresh, baby)
- 4 grape tomatoes (halved)
- 3 tbsp chickpeas (canned, rinsed and drained)
- 1 tsp parsley (fresh, chopped)
- 1 tsp green onion (chopped)
- 1" slice avocado
Dressing
- 2 tsps olive oil
- ½ tsp lemon juice
- 1 pinch garlic powder
- hot pepper sauce (to taste)
- salt and pepper (to taste)
Instructions
- In a large bowl, toss spinach and warm quinoa, allowing the spinach to wilt slightly. Add tomatoes, chickpeas, parsley and green onions.
- Whisk together dressing ingredients. Toss with salad.
