Quesadillas are always a fan favorite - try this healthy twist!

Ingredients
- 1 ounce fresh baby spinach (about 1 cup)
- 1 green onion (chopped)
- ⅓ small tomato (diced)
- 1 tsp lemon juice
- ¼ tsp ground cumin
- 1 pinch garlic powder
- 2 tbsp shredded cheese (ie. Monterey Jack cheese or Mexican cheese blend)
- 3 tbsp low-fat cottage cheese
- 1 tortilla (whole wheat recommended)
Instructions
- In a large nonstick skillet, cook and stir the first six ingredients until spinach is wilted. Remove from heat; stir in cheeses.
- Place the tortilla in a pan that has been lightly coated with olive oil. Fill half the tortilla with the spinach mixture and fold over. Cook over medium heat until golden brown, 1-2 minutes per side. Enjoy!
Notes
Serve with cilantro and salsa!
