• 1 Tsp butter or oil
  • 1/2 cup cooked asparagus, cut in bite size pieces
  • 2 eggs - beaten
  • 1 oz smoked salmon or lox
  • 1/2 tsp dried dill
  • 1/8 cup Crumbled goat cheese (optional)
  • salt and pepper to taste


Heat butter in a pan over medium heat. Add asparagus, eggs, salmon and dill. Stir while cooking until eggs are set. Put on plate and crumble goat cheese over eggs. Option: put on whole wheat toast
