Ingredients:

  • 1 cup cooked quinoa (cook according to package)
  • 1 cup roasted vegetables
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/4 cup fresh basil (1/2 tsp dried)
  • salt and pepper to taste

Directions:

Mix together all ingredients. Eat cold or warm.
