Fantastic!! So tender, flavorful (although, as a few other reviewers said, it doesn’t have a lot of Mexican flavor which suits my hubby fine). He started requesting I make this again even before the first one was gone, lol! I am putting the second roast in the crockpot right now!

What a fun way to serve the Barbacoa and a great idea to make extra while you were at it!

Great easy dinner. Falling apart tender and so easy to make! I made a bar with salsa, lettuce, onion, tomatoes, jalapenos, cheese, sour cream, taco shells, tortillas and chips as I have teens and young adults in my family. Made it easy for everyone to customize. Very easy to leave off any items. Next time I hope to offer with some spicy slaw in lieu of all the extra toppings and make some homemade tortillas. Made extra so we can have it two nights.
