Ingredients 

  • ¾ tsp oil
  • ¾ lb chuck roast (boneless)
  • ¾ tsp salt
  • 1 tbsp chili powder
  • ½ tsp garlic powder
  • ¼ tsp cumin
  • ¼ tsp paprika
  • ¼ tsp pepper
  • ¼ lime
  • ¼ cup beef broth
  • 2 tbsp cilantro (fresh)

Instructions 

  • Combine all seasonings and season roast on all sides. Heat oil in Instapot or in large skillet. Sear roast on all sides for about 1 min each side, then put in slow cooker. Cover with broth and slow cook for 8-9 hours. Shred meat with two forks (pull meat apart), and squeeze with juice of one lime. Top with fresh cilantro.

    Great easy dinner. Falling apart tender and so easy to make! I made a bar with salsa, lettuce, onion, tomatoes, jalapenos, cheese, sour cream, taco shells, tortillas and chips as I have teens and young adults in my family. Made it easy for everyone to customize. Next time I hope to offer with some spicy slaw in lieu of all the extra toppings and make some homemade tortillas. Made extra so we can have it two nights.
