Nothing sells Fall quite like squash and apples. Love this recipe for breakfast or a snack.

Ingredients
- ⅓ cup butternut squash (roasted)
- ¼ cup oats
- 1 egg
- ⅓ tsp cinnamon
- ⅓ tsp vanilla
- ¼ tsp baking powder
- ⅛ tsp nutmeg
- 2 tbsp cottage cheese
- 1 tbsp oil
- ½ apple (optional)
- 1 tbsp apple cider (optional)
- 1 tbsp pecans (optional)
Instructions
- In a bowl, combine butternut squash, cottage cheese, oats, egg, cinnamon, vanilla, baking powder, and nutmeg. Stir until smooth.
- Heat a skillet with oil. Pour small portions of batter onto the skillet and cook for 2-3 minutes per side, until golden brown.
- Top with pecans and cooked apples if you'd like!
