This is a hearty and satisfying breakfast that's sure to spice up your morning routine!

Ingredients 

  • 2 tbsp vegetable broth
  • 1 potato (small, diced into small cubes)
  • ½ cup black beans (drained and mashed)
  • 2 eggs
  • 2 tbsp salsa
  • ¼ cup cilantro (chopped )
  • 5-6 tortilla chips (choose a corn tortilla chip if gluten free)
  • salt and pepper (to taste)

Instructions 

  • Put broth in a small pan and heat over medium/high heat.
  • Add potatoes, cover and cook for 15 minutes.
  • Stir in mashed beans and salsa.
  • Crack egg and place on top of potato and beans.
  • Turn heat to low and cover until eggs have set, approx. 7 min.
  • Place on plate, add chopped cilantro and serve with tortilla chips.
