Ingredients
- 2 tbsp vegetable broth
- 1 potato (small, diced into small cubes)
- ½ cup black beans (drained and mashed)
- 2 eggs
- 2 tbsp salsa
- ¼ cup cilantro (chopped )
- 5-6 tortilla chips (choose a corn tortilla chip if gluten free)
- salt and pepper (to taste)
Instructions
- Put broth in a small pan and heat over medium/high heat.
- Add potatoes, cover and cook for 15 minutes.
- Stir in mashed beans and salsa.
- Crack egg and place on top of potato and beans.
- Turn heat to low and cover until eggs have set, approx. 7 min.
- Place on plate, add chopped cilantro and serve with tortilla chips.

Switch Black beans for Pinto beans because I dislike Black beans. I also don’t use the chips since I don’t have teeth.
