Ingredients
- 4 oz shrimp
- ½ cup kale
- ¼ cup brown rice (cook according to package)
- ½ tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 clove garlic (minced)
- salt & pepper (to tast)
Instructions
- Heat olive oil in a pan. Add garlic and shrimp, cooking until pink (about 3-4 minutes).
- Remove shrimp and sauté kale in the same pan for 2-3 minutes.
- Put shrimp back in the pan and add the lemon juice, salt and pepper
- Serve over brown rice.
