Ingredients 

  • 1 corn tortilla (can use flour tortillas)
  • 3 oz chicken (sliced, can use pork)
  • ¼ cup cooked quinoa (cook according to package)
  • ¼ cup salsa
  • 1 tbs low-fat plain yogurt (or substitute dairy-free yogurt)
  • ½ tomato (diced)
  • ¼ cup lettuce (chopped, can use spinach or kale)

Instructions 

  • Mix pork (or chicken), quinoa, salsa, yogurt, lettuce and tomato.
  • Place the tortilla on a plate and divide the filling ingredients equally placing into the middle of each tortilla. Roll up and enjoy!
