Ingredients
- 1 corn tortilla (can use flour tortillas)
- 3 oz chicken (sliced, can use pork)
- ¼ cup cooked quinoa (cook according to package)
- ¼ cup salsa
- 1 tbs low-fat plain yogurt (or substitute dairy-free yogurt)
- ½ tomato (diced)
- ¼ cup lettuce (chopped, can use spinach or kale)
Instructions
- Mix pork (or chicken), quinoa, salsa, yogurt, lettuce and tomato.
- Place the tortilla on a plate and divide the filling ingredients equally placing into the middle of each tortilla. Roll up and enjoy!
