These pancakes topped with peanut butter are made with mashed banana for a moist, tender breakfast or an afternoon snack!

Ingredients 

  • ½ banana (the riper the banana, the sweeter your pancake will be)
  • 1 egg
  • 1 tsp coconut oil
  • 1 tsp peanut butter (topping)

Instructions 

  • Put eggs and banana in a food processor or blender and blend until smooth.
  • Melt coconut oil in a pan over medium heat.
  • Pour 1/2 of the mixture into the pan and cook until lightly browned on both sides.
  • Top with peanut butter and enjoy!
