Ingredients
- ½ banana (the riper the banana, the sweeter your pancake will be)
- 1 egg
- 1 tsp coconut oil
- 1 tsp peanut butter (topping)
Instructions
- Put eggs and banana in a food processor or blender and blend until smooth.
- Melt coconut oil in a pan over medium heat.
- Pour 1/2 of the mixture into the pan and cook until lightly browned on both sides.
- Top with peanut butter and enjoy!
