Seared Salmon with Tomato, Pepper Relish
1/2 pound salmon
1/8 cup chopped red peppers
1/8 cup diced tomatoes
1/8 cup diced onion
1 tbsp balsamic vinegar
1/8 cup fresh basil, chopped (use parsley for filming, basil froze)
1 tbsp olive oil (divided)
Salt and pepper to taste
In a small pot add 1 tsp oil and heat over medium heat. Add onions and cook until soft. Add vinegar and stir. Add peppers and cook 2 minutes. Remove from heat and add tomatoes.
In a separate skillet add 2 tsps oil. When hot add salmon skin side up. Cook for 4 minutes or until seared. Turn heat to low. Flip and cook until cooked throughout (time varies according to thickness).
Remove from pan and cut in half. Save half for lunch the next day. Top remaining half with pepper relish and fresh basil.
