- ½ cup broccoli (chopped)
- ½ cup cauliflower
- 1 tbsp olive oil
- 1 tbsp vegetable broth
- salt and pepper (to taste)
Instructions
- Put vegetables in blender in batches and blend until the size of rice.
- Add oil to skillet and heat over medium/high heat.
- Add the “rice” and cook for 4 minutes.
- Add broth, cover, cook additional 5 minutes, and serve.
