• 2 cups chicken broth
  • 2 cups fresh spinach or power greens
  • 1/2 cup grated or shaved carrots
  • 7-8 cheese tortellini
  • 1 tsp grated parmesan cheese


Add broth to a pot and bring to a simmer over medium heat. Add carrots and spinach and cook for 3 minutes. Add tortellini to simmering broth and cook until soft, about 5 min. Pour into a bowl and top with parmesan cheese.
