Ingredients
- 1 4 oz chicken breast (grilled)
- â…“ cup marinara sauce (can substitute tomato puree )
- ¼ tsp dried oregano
- 1 slice mozzarella cheese (approx. 1 ounce per slice)
- â…› cup fresh basil (chopped)
Instructions
- Place grilled chicken breast in an oven-safe dish.
- Top with tomato sauce, oregano, and cheese. If the chicken is already hot then just broil it in the oven until the cheese is melted. If you are using chilled chicken, heat in a preheated 375° oven for 15 min. or until the chicken is hot and the cheese is melted.
- Top with chopped fresh basil and serve.

I used boneless chicken thighs had fresh basil I’ve been growing and this was a nice easy dish. I did not have mozzarella cheese but I had white cheddar and swiss.
That sounds really yummy – it’s great to be able to use what you have.
