Ingredients
- 2 ¼ tsp olive oil
- ¼ cup chicken breast (cooked and diced)
- ¼ cup peppers (sauteed)
- ¼ cup onions (sauteed)
- 1 ½ eggs (beaten)
- ¾ tsp fresh parsley (chopped)
- salt and pepper (to taste)
Instructions
- Preheat oven to 325 degrees.
- Use an oven-safe pan and add olive oil to coat the bottom of the dish.
- Add sauteed onions, peppers, and cooked and diced chicken to the baking dish.
- Pour the beaten eggs over the onions, peppers, and chicken.
- Add parsley and put the baking dish into preheated oven. Cook for about 10-15 minutes or until eggs are set.
