Ingredients
- ¾ cup cooked quinoa (cook according to package)
- ⅛ cup carrots (shredded)
- ⅛ cup peas
- ⅛ cup red peppers (diced)
- ⅛ cup garbanzo beans
- 1 tsp parsley (fresh, use less if dried)
- 2 tsp olive oil
- ½ tsp fresh lime juice
- salt & pepper (to taste)
Instructions
- Mix in all ingredients. If you'd like, garnish with a few tomatoes or a lime, and enjoy!
