Ingredients 

  • ¾ cup cooked quinoa (cook according to package)
  • cup carrots (shredded)
  • cup peas
  • cup red peppers (diced)
  • cup garbanzo beans
  • 1 tsp parsley (fresh, use less if dried)
  • 2 tsp olive oil
  • ½ tsp fresh lime juice
  • salt & pepper (to taste)
