This is a delicious way to get lots of protein and fiber. It can be enjoyed as a meal or a side.

Ingredients 

  • 1 cup cooked quinoa (cook according to package)
  • 1 tbsp olive oil (divided use)
  • ¼ cup fresh basil (chopped)
  • 1 tbsp lemon juice (fresh squeezed)
  • 1 ½ tsp Dijon mustard
  • â…“ cup red pepper (diced)
  • 1 green onion (thinly sliced)
  • ¼ cup black beans (drained and rinsed)
  • ¼ avocado (diced)

Instructions 

  • Cook quinoa according to package and bring to room temperature. Combine all ingredients and stir well.

Notes

Can be used as filling for a wrap using a tortilla or lettuce.
