Lemony Wilted Spinach


2 tablespoons olive oil

2 garlic cloves, thinly sliced

Juice from 1 lemon

4 cups packed fresh spinach leaves or power greens

Pinch sea salt



  • Add olive oil and garlic to skillet, cook over medium heat, stirring often.
  • When garlic begins to brown add lemon juice and spinach.
  • Cook for 1 minute and then stir. Stir every 30 seconds until leaves are wilted. Add salt. Stir and serve.
