Ingredients
- ⅙ cup quinoa (uncooked )
- ¼ cup chicken breast (cooked, boneless, skinless, chopped)
- ⅛ cup cucumbers (diced)
- 1 tbsp celery (diced)
- 1 tbsp green onion (sliced)
- 1 tbsp cilantro (chopped)
Dressing
- ¼ clove garlic (minced)
- 1 tbsp white wine vinegar
- 1 tbsp olive oil
- ¼ tsp cumin
- ¼ tbsp lime juice (fresh)
Instructions
- Cook quinoa according to package and then cool to room temperature and add chicken, cucumbers, celery, onions, and cilantro. Stir well.
- In a separate bowl add all dressing ingredients. Stir well or blend.
- Pour dressing over quinoa. Refrigerate or enjoy at room temperature.
