Ingredients
- â…“ cup quinoa (uncooked )
- ½ cup chicken breast (cooked, boneless, skinless, chopped)
- ¼ cup cucumbers (diced)
- ¼ cup celery (diced)
- â…› cup green onion (sliced)
- â…› cup cilantro (chopped)
Dressing
- ½ clove garlic (minced)
- â…› cup white wine vinegar
- â…› cup olive oil
- ½ tsp cumin
- ½ tbsp lime juice (fresh)
Instructions
- Cook quinoa according to package and then cool to room temperature and add chicken, cucumbers, celery, onions, and cilantro. Stir well.
- In a separate bowl add all dressing ingredients. Stir well or blend.
- Pour dressing over quinoa. Refrigerate or enjoy at room temperature.
